Lamb Steaks with Mustard Sauce

Serves 4

  • 4 lamb leg steaks
  • 3 tbsp olive oil
  • 2 small shallots
  • 150ml white wine
  • 200ml crème fraîche
  • 1 tbsp wholegrain mustard
  • 1 level tbsp Dijon style mustard
  • 1 tbsp chopped parsley
  • Salt and pepper


Step 1

Take the lamb steaks out of the fridge 30 minutes in advance of cooking.

Step 2

Heat 2 tablespoons of oil in a saucepan. Chop the shallots very finely, add them to the saucepan and cook them for 1 minute. Cover and leave to sweat for 5 minutes on a very low heat.

Step 3

Add the white wine and reduce by half over a medium heat. Next, add the crème fraîche and the two types of mustard. Simmer gently while the lamb is cooking.

Step 5

Pour the sauce into the frying pan and scrape up the cooking juices. Add the parsley and adjust the seasoning. 

Step 6

Serve immediately with chips and a salad.

Chef's Tip

The combination of wholegrain mustard (for its mellow flavour and the crunch of the grains) and Dijon style mustard (for its intensity) make this sauce perfectly balanced.
